Coconut Ginger Chicken Recipe

Instructions
- In a large skillet, add 0.25 cup of shredded coconut and toast
- Separately in another pan, add 0.5 cup coconut milk, 1/2 cup water and 1 tablespoon freshly grated ginger
- when the liquid starts boiling, lower the flame to a simmer and cover the chicken until cooked and tender
- Remove the chicken and place in another plate
- Turn the heat to high flame and boil the mixture
- Lower the heat readd the chicken and coat with the sauce
- garnish with shredded coconut
