Authentic Chicken Enchilada Recipe

Ingredients
- 9 tomatillos husked and rinsed
- ½ white onion chopped
- 1 serrano chile
- 1 yellow chile
- 2 cloves garlic
- cup ½fresh cilantro leaves
- salt and black pepper
- cup ¼vegetable oil
- 6 corn tortillas
- 2 chicken breasts shredded
- cup ½sour cream
- 1 cup Monterey Jack cheese shredded

Instructions
- Preheat your oven to 350 degrees F.
- Boil the tomatilllos, Serrano and yellow chile in the water over medium heat.
- Boil for ten minutes.
- Then, put the mixture in a blender, add the garlic and cilantro and blend until smooth.
- Add salt and pepper as per taste.
- In a small skillet, fry the tortillas until golden (ten seconds on each side).
- Divide the shredded chicken into six equal portions and fill each tortilla with it. Roll the tortillas into cylinders.
- In a baking dish, spread 1/3 cup of the sauce over the bottom.
- Place the filled tortillas over the sauce.
- Pour the rest of the sauce over the tortillas.
- Then pour over the sour cream and cheese and bake for thirty minutes.
- Serve immediately.
