Chicken Enchilada Dip
An enchilada is a Mexican dish, which consists of a corn tortilla wrapped around a filling made with a variety of ingredients, including meat, cheese, beans, potatoes, vegetables or combinations. The roll is topped with a fiery chili pepper sauce that gives the preparation the signature Tex-Mex zest and often served with a side of rice and refried beans. As the name suggests, the enchilada dip is a Mexican dip made with the core enchilada ingredients like cream cheese, chicken, cheddar, and chili peppers. The dip is essentially the enchilada filling baked along with a blanket of cheddar on top sounds heavenly, doesn’t it? Follow the recipe below to cook some of this mouth-watering Mexican dip at home!

- 1 pound boneless and skinless chicken breasts
- 8 ounce cream cheese softened
- 8 ounce mayonnaise
- 8 ounce cheddar cheese shredded
- 4 ounce green chili peppers shredded
- 1 jalapeno pepper finely diced

- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breast halves on a medium baking sheet. Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.
- Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise,
- Cheddar cheese, green chili peppers and jalapeno pepper. Transfer the chicken mixture to a medium baking dish.
- Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.
- Serve with chips or nachos.
