Instructions
Add the noodles to a pot of boiling water with salt and oil
Cook until al-dente and remove from heat
Drizzle some oil on top of the noodles. Mix well and set aside.
Toast the cashew nuts in a frying pan and set aside
Add 1 tbsp of vegetable oil in a frying pan and heat it on medium
Season the chicken with some pepper, and add it to the pan
Stir-fry the chicken for 2-3 minutes or until golden in color
Add the coriander stalks, garlic and ginger and cook for 1 more minute
Add the spring onions, carrots and broccoli and stir-fry for 2 minutes
Add the cooked noodles and stir-fry until the noodles becomes warm
Stir in the soy sauce and fish sauce
Remove from heat and garnish with nuts, sliced chilli and coriander leaves. Serve hot.
