Instructions
Add the cumin, chili powder, salt and pepper to the chicken and mix well to coat the chicken with the spices
Add oil to a large frying pan over medium heat and heat it up
Add the chicken and cook, stirring occasionally, for 5 to 7 minutes
Once cooked, remove the chicken from the pan and set it aside
In the same pan, add a bit of oil and when heated up, add the pepper, onions, mushrooms, and garlic
Cook until it becomes soft, for about 4-6 minutes
Add the chipotles, lime juice and then the chicken
Stir together until all the ingredients are mixed well
Season with salt and pepper
To serve, add the chicken mixture to the tortillas and top it off with some cheddar cheese and other garnishes mentioned in the ingredients list
