Sandwiches are awesome. And you know what’s better than sandwiches? Ice cream. And what’s even better than the two? The two of them put together in one big, sinful, and delicious ice cream sandwich! And what’s a great place and occasion to chow down some of this frozen sandwich hybrid? Well currently it’s the Coachella Valley Music and Arts Festival. But if you’re not in California attending the swanky music fest, that’s okay because you can bring the food home!

Of course, there is nothing like banging your head to great music as you have the ice cream sandwich, but something is better than nothing, right? The best part? You can make some of these and keep it stored for up to two weeks! So try out this quick and easy ice cream sandwich recipe at home to bring home the Coachella vibe!

Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  2. In a large bowl, mix together the cake mix, butter, vanilla extract, eggs, chocolate chips, and butterscotch chips into a dough.
  3. Roll dough into 2-inch balls and place them onto the prepared baking sheets. Bake for 10 minutes in the preheated oven. (Do not over bake, as the cookies need to be set, but still soft.) Let cool on the baking sheet for a few minutes before removing to finish cooling on wire racks.
  4. Using an ice cream scoop, mold the softened ice cream into a ball about the size of the cookies. Place scoop of ice cream between two cookies and gently press together. Fill all of the cookies, lay out on a baking sheet, and place in the freezer to harden.
  5. Serve when the ice cream has frozen solid.
