Coriander & Lime Chicken

It seems like most people don’t particularly enjoy making chicken dishes because they believe that it takes too much time or it’s too complicated. Sure, cleaning your chicken isn’t particularly fun, but it’s not the end of the world. If you get pre-cut pieces of boneless chicken, your problems are already cut down by a million. Plus, the cleaning process then would be minimal. Remember to wash nicely in warm water before you start to cook.

But this dish is easy! It takes you a total of 15 minutes to get ready and then about 5 minutes to cook, with an hour reserved to let the marinade soak into the chicken. If you’ve got friends suddenly showing up for dinner and you don’t feel like ordering in, then this is the way to go. It takes six ingredients, a little bit of your time and you’re ready to serve.

Instructions
Marinade
  1. Blend all ingredients (except lime juice) together in a food processor or blender until a paste.
  2. Stir in lime juice.
  3. Combine chicken with marinade and leave to marinate in the fridge for at least 1 hour
  4. When ready to cook, remove chicken from fridge and stand at room temperature for 20-30 minutes
  5. Cook on a preheated grill or on the stove (low to medium heat) for 3-5 minutes on each side or until cooked through.
  6. Allow to rest for a few minutes before serving.
