- 3 egg
- 1/2 tsp Mustasrd seeds
- fresh curry leaves a few
- 1 tbsp Chilli Poweder
- Turmeric powder a generous pinch
- asafoetida (hing) a generous pinch
- 2 tbsp Oil
- Salt as required

Instructions
Prep work:
- Boil the egg in lots of water exactly 12 mins. Then Discard the water and run them through cold water
- Remove the shells off the egg with and make 4-5 cuts on the eggs. Make sure the eggs don't break. Set aside.
For making masala fry:
- In a pan heat oil. And add mustard seeds and let then splutter. Add Asafoetida and curry leaves. On a low flame add tumeric powder, chilli powder and salt as needed, Fry for a minuite.
- Then add boiled eggs and fry for a couple of minutes. Make sure the masala in coated well on the eggs. For crispy outer layer , keey frying/roasting for 4 mins. Remove the heat
- Serve hot
