Independence Day: Tiranga Rice Recipe

Ingredients
For Orange Rice
- 1 cup Rice soaked and drained
- 2 tbsp ghee
- 1/4 tsp Cumin seeds
- 1 tsp Ginger paste
- 1/4 cup tomato purée
- 1/2 tsp Turmeric powder
- 1/2 tsp red chilli powder
- 1 tsp red chilli paste
- Salt to taste
For White Rice
- 1 cup cooked rice
For Green Rice
- 2 tbsp ghee
- 1/4 tsp Cumin seeds
- 1 tsp ginger taste
- 1 tsp green chilli paste
- 1/2 cup spinach purée
- Salt to taste
For the Ashoka Chakra
- 1 tbsp Cumin powder
- 1/2 small onion thinly sliced

Instructions
- To make the orange rice, heat ghee in a pan.
- Add cumin seeds and once they change colour add the rice, ginger paste, red chilli powder and red chilli paste and cook.
- To this add tomato puree, salt and one cup of water, give it a stir and cook till the rice is done.
- To make the green rice begin again by adding the ghee and then cumin seeds to a pan.
- Then add turmeric powder, rice, green chilli paste, ginger paste, salt and cook.
- Add half cup of water and slowly bring it to a boil.
- Add the spinach puree, give it a stir and cook till the rice is done.
- Arrange orange, white and green rice on a plate in the form of a tricolour as shown in the picture.
- You can make Ashoka Chakra with some cumin powder in the centre of the white rice if you're feeling creative.
- Alternatively you can deep fry onions, remove excess oil on a kitchen towel and arrange them into the chakra.
