Mexican Egg Muffins Recipe

Ingredients
- 1 English muffin split and toasted
- 2 Large Eggs
- 2 tbsp Oil
- 2 -3 tbsp Mexican salsa
- 2 slices cheddar cheese
- salt and pepper to taste

Instructions
- In a small bowl, beat egg, salt and pepper.
- Heat oil in a skillet and add the egg mixture.
- Cook and stir until eggs are set.
- Spoon out the egg mixture equally on halves of English Muffin and top with salsa and then sliced cheese.
- Place on a baking sheet and broil until cheese begins to melt.
- Serve.
