Preserved Tomato Sauce and Sundried Tomato Pizza

Ingredients
- Small sized tomatoes – 4
- 250 gms processed cheese
- 2 tsp finely chopped garlic lehsun
- 2 tsp chopped onion
- 1 tsp Mixed Herbs
- tsp ½sugar
- salt to taste

Instructions
- Cut tomatoes in wedges
- Remove the seeds
- Oven dry @ 180 C till they dry
For the tomato sauce
- In a pan, heat some oil, add chopped garlic, onion and sauté till translucent
- Add salt and 1 cup preserved tomato puree
- Season sauce with black pepper powder and mixed herbs
- Add sugar to balance the sourness
- In a wholewheat pizza base, spread the tomato sauce
- Arrange oven dried tomato slices
- Spread cheese evenly on top
- Bake for 12 to 15 minutes or till the cheese melts and the pizza turns crisp
- Garnish with fresh / dried herbs.
