Thai Chicken Pizza
The Thai chicken pizza is an interesting fusion between regular pizza ingredients, like cheese with Thai flavours such as peanut butter and soy sauce. The combination works very well together and is fairly simple to carry out. This pizza would work well for an Asian meal!

Ingredients
- 1 packet pizza dough
- 1/2 cup plum sauce
- 1/2 tsp red pepper flakes crushed
- 2 cups Monterey Jack cheese
- 1/2 red bell pepper thinly sliced
- 1 tbsp vegetable oil
- 2 tbsp soy sauce
- 1 tbsp peanut butter
- 2 tsp hot sauce
- 4 chicken breast cutlets
- 2 tbsp rice wine vinegar
- 1/4 seedless cucumber peeled and finely sliced
- 4 scallions chopped
- 1 cup bean sprouts
- 1 handful cilantro leaves finely chopped
- 1/4 cup Peanuts chopped

Instructions
- Preheat your oven to 425 degrees F.
- Spread the pizza dough across a pizza pan to form the crust.
- Spread the plum sauce across the crust.
- Sprinkle the pepper flakes across the crust and then sprinkle the cheese over it.
- Place the pizza in the oven and bake for 15 minutes.
- Heat the peanut butter in a microwave for ten seconds.
- Whisk the vegetable oil, soy sauce, hot sauce and peanut butter together and then place the mixture in a pan over medium high heat.
- Coat the chicken cutlets with this mixture after it is well combined and allow them to rest for ten to fifteen minutes.
- Then, grill the cutlets for three minutes on each side.
- Allow the cutlets to cool and slice them into thin strips.
- Mix the honey and vinegar together and coat the cucumber sticks with this mixture.
- Drain the excess liquid off the cucumber sticks.
- After taking the pizza out of the oven, scatter the sliced chicken over it.
- Add the scallions, sprouts and cilantro to the pizza and then top it with the cucumbers
- Garnish the pizza with the peanuts, slice it and serve while it’s still warm.
