- 1/3 cup barnyard millet samvat rice
- 3 cups Milk
- 15 Cashew nuts chopped
- 1 tbsp Golden Raisins
- 5 tbsp sugar
- ½ tsp green cardamom powder
- 9 strands of saffron kesar

Instructions
- Soak the barnyard millet in a cup of water for an hour.
- Drain and keep aside.
- Heat the milk on a medium flame.
- When the milk begins to boil, add the soaked barnyard millet to the pan, and stir well.
- Cover the pan and reduce the flame. Allow the mixture to simmer for twenty minutes, stirring occasionally.
- After twenty minutes, stir in the sugar until it dissolves.
- Add the cardamom powder and saffron and stir.
- Add the cashew nuts and raisins.
- Allow the kheer to simmer for a minute and then remove it from the stove.
- Garnish with saffron strands, or cashew nuts.
Recipe Notes
This kheer can be served either hot or chilled.
