This tawa fish fry recipe is modelled after Amritsari fried fish – a spicy, masala coated fish fry that is a popular street food in North India, especially in Punjab.

Instructions
  1. Dry roast the besan over a low flame for a few minutes.
  2. Combine the chili powder, kasuri methi, tandoori masala, biryani masala, amchur, lemon juice, turmeric powder, salt and ginger garlic paste.
  3. Marinate the fish with this combination of ingredients and allow it to sit for 10-15 minutes.
  4. Heat the oil and add the ajwain to it.
  5. Allow the ajwain to splutter and add the fish to the pan
  6. Sauté the pieces on one side for 5 minutes and 5 minutes on the other.
  7. Coat the fish piece with besan and fry for a further 3-5 minutes until the fish is cooked.
  8. Serve hot!
