Thai Beef Lettuce Wraps

Ingredients
- 1 tbsp avocado oil
- 4 scallions thinly sliced
- 1 red chile thinly sliced
- 2 cups Fresh Basil Leaves rolled and thinly sliced
- 3 carrots peeled and julienned
- 4 tbsp fresh lime juice
- 9 garlic cloves thinly sliced
- 5 ounces water chestnuts chopped
- 1 3/4 pounds ground beef*
- 1 1/2 tsp Salt
- 1/4 tsp black pepper
- 2 1/2 tbsp soy sauce
- 1 1/2 tbsp fish sauce
- 1/2 tbsp coconut palm sugar
- leaves Lettucefor serving

Instructions
- Whisk half of the fish sauce, the soy sauce and sugar together until the sugar dissolves.
- Combine the red chiles, 2 cups of basil, carrots, lime juice, one tablespoon of the avocado oil and a little salt together.
- Refrigerate this mixture.
- Heat the remaining oil and sauté the garlic and red chile for 30 seconds.
- Add the chopped water chestnuts and sauté.
- Add the beef and salt and sauté for ten minutes.
- Remove the bean, strain and then put it back in the pan over high heat.
- Add the basil leaves and remaining fish sauce and sauté until the basil leaves wilt.
- Take the beef of the stove, put into a serving bowl and serve with the lettuce leaves and carrot slaw.
