Chalimidi Recipe
Chalimidi is a sweet dish made of rice flour that finds its roots in Andhra Pradesh. While the dish has seen many variations across South Indian kitchens, the originals remain the Pachi Chalimidi (uncooked) and Pakkam Chalimidi (made with sugar syrup). Both are equally delicious, but the former is easier to make if it is your first time. Moreover, Pachi Chalimidi is quicker to make.
To make the dish, it is advisable to grind the rice flour fresh at home. It does not take rocket science – just soak raw rice overnight or for about 8 hours; let it dry for about 30 minutes and grind it into a fine powder. Follow this recipe to whip up a delicious Pachi Chalimidi and serve as dessert or prasadam.
