Fusion Food In India Is A Hit!
Turns out that we’re not the sticklers for Indian food that we all claim to be. Fusion food is hitting it big here in India and it’s not hard to see why! Chef Pablo Agular said “I feel there are a lot of things happening in the food and beverage business in India. I would say that international influences mixed with Indian flavours is something that will always be there.”
In fact, I would credit food shows such as Masterchef for this spike in demand for fusion food as it has exposed us to different cuisines and styles of preparing even Indian dishes. Renowned Pastry Chef Pooja Dhingra (not to be confused with Dhinchak Pooja) said: “Small and sharing plates [are more common], menus are smaller and more concise, [there are] specialised dessert stores.”
Chef Irfan Pabaney feels many people also like to go back to the roots of Indian cuisine. Pabaney said: “As far as food trends are concerned, a lot of restaurants are going back to its roots… There is so much about Indian food that has thus far remained unexplored. That being said, as important as food is, the new drinking culture has set in in a big way.
Dhingra also pointed out that people have become “more experimental and are willing to try new things”. Of course we are! Indian fusion food, bring it!
