Ingredients
- 1 cup of Rice flour
- 1 cup of water as needed to form the dough
- 1/4 teaspoon of Salt

Instructions
- Dry roast the rice flour for 2 mins, sprinkle the salt over it and set aside.
- Bring water to a boil in a saucepan.
- Remove from heat and add half the boiling water, slowly the rice flour.
- Mix with a wooden spoon until the dough comes together.
- Add more water until the dough looks more wet than dry, still stirring. Keep yourself from adding all of it.
- Knead with the hands to form a soft dough.
- Grease an idiyappam press.
- Feed dough into the press.
- Take your steam plate and slowly press out swirls from the outside to the inside.
- Steam for 12-15 minutes.
- Serve hot.
