Pepper Chicken Roast Recipe
Pepper chicken roast is a popular chicken specialty in Kerala. Chicken is first cooked in a combination of spices and then dry roasted until it absorbs all the flavours.
Serve the chicken roast with plain rice, Kerala parathas or appams.

Ingredients
- 1 kg Chicken chopped into pieces
- 4 onions sliced
- 1 1/2 tbsp Ginger crushed
- 1 1/2 tbsp garlic crushed
- 3 green chillies slit lengthwise and sliced
- 2 1/2 tbsp black pepper crushed
- 2 tsp garam masala
- 1 tsp aniseed powder
- Salt as per taste
- A handful of curry leaves
- 3 tbsp coconut oil
To marinate
- 1 1/2 tsp pepper powder
- 1/2 tsp Turmeric powder
- 1 1/2 tbsp Lemon juice
- 1 tsp Salt

Instructions
- Combine the ingredients for marinating and coat the chicken pieces with them.
- Allow the chicken to marinate for half an hour.
- Grind the ginger and garlic together into a fine paste.
- Heat the oil and sauté the onions and curry leaves.
- As the onions begin to brown, stir in the ginger garlic paste and the green chilies.
- Then, stir in the aniseed powder and crushed black pepper.
- Stir in the chicken, along with the marinade and sauté until the chicken is well coated.
- Cover the chicken and allow it to cook on a medium flame for 20 minutes.
- Take the lid off the pan and stir in a tablespoon of oil.
- Allow the chicken to cook until well roasted.
- Place into a serving dish and enjoy!
