Carrot Coriander Soup Recipe

- 1 tbsp vegetable oil
- 1 onion chopped
- 1 tsp ground coriander
- 1 Potato chopped
- 450 g carrots peeled and chopped
- 1.2 l vegetable or chicken stock
- 150 g coriander
- salt to taste

Instructions
- Heat the oil in a large pan.
- Fry the onions for 5 minutes until softened.
- Stir in the ground coriander and potato, then cook for a minute.
- Add the carrots and stock, bring to boil, then reduce the heat.
- Cover and cook for 20 minutess until the carrots are tender.
- Transfer to a food processor with the coriander and blend until smooth
- Return to pan and add salt if necessary.
- Reheat and serve.
