Chicken Tostadas Recipe
Mexican cuisine is as heartwarmingly delicious as it is quick and easy to whip up, provided your pantry is Tex-Mex friendly. And if that’s the case then it hardly take a few quick minutes to load the taco shells, tortillas, and tostadas with fiery sauces, meats, beans, some Monterey Jack, and gobble up the awesomeness. Not generalising, but that’s how simply brilliant the cuisine is! One such easy Mexican recipe is the chicken tostada.
The non-vegetarian preparation can be munched as a snack as well as a proper meal, depending on the size and quantity of your tostadas and toppings. Follow the recipe below to pile up some scrumptious tostadas this weekend. You can even switch the chicken for some veggies for a delicious vegetarian tostada!

- 8 Tostada shells
- 1 cup refried beans warmed
- 4 cups cooked chicken shredded
- 2 cups Lettuce finely shredded
- 1 medium red onion thinly sliced into rings
- 8 radishes thinly sliced
- 1 cup crumbled queso fresco or mild feta cheese
- Mexican sour cream or regular sour cream for drizzling
- Fresh Tomatillo-Avocado salsa (or any other salsa)

- Spread the tostadas with the refried beans.
- Top with the chicken, lettuce, onion rings, radishes, and cheese.
- Drizzle with sour cream, top with a dollop of salsa, and serve.
