Instructions
  1. Line a cookie baking sheet with parchment paper
  2. Add the coconut to a small frying pan over medium heat and lightly toast it until the coconut turns light golden
  3. Remove from heat and place it in a small bowl to cool
  4. In a saucepan placed over medium heat, add the honey, corn syrup and peanut butter together and bring to a boil while stirring continuously
  5. Remove this mixture from the heat and add chocolate chips and cocoa
  6. Stir until the chocolate has melted and then add the cereal and toasted coconut
  7. Stir until all the ingredients are well combined
  8. Divide the mixture into small balls and shape them into a cookie
  9. Place the cookies on the baking sheet and refrigerate for about 15 minutes or until the mixture is set
  10. Serve cold topped with some icing sugar (optional)
