FRIENDS Cheesecake Recipe

If you’re a 90s kid, the chances are that you’re a F.R.I.E.N.D.S fan. There are a million food moments in the show (half of them courtesy Joey and Monica), but one of our favourite episodes devotes a lot of time to a cheesecake obsession – The One With All The Cheesecakes.

Remember the story? Chandler finds a cheesecake on the doorstep, and despite knowing its addressed to someone else digs in. We can empathise. Then, Rachel joins him and they develop a cheesecake addiction – eventually going so far as to eat it off the floor. Again, we totally get it.

While we never figure out exactly what flavour the cheesecake was or what made it so special, we thought we would share a recipe for a delicious, creamy New York cheesecake that’s as good as we imagine the F.R.I.E.N.D.S one to be.

Instructions
  1. Preheat the oven to 240 C.
  2. Melt the butter and stir in the biscuit crumbs and sugar.
  3. Line a 23 inch cake pan with greaseproof paper.
  4. Gently press the crumbs mixture into this pan to form an even base.
  5. Gently whisk the cheese until it softens ad becomes creamy.
  6. Stir in the sugar and flour, whisking constantly.
  7. Stir in the vanilla, lemon zest, juice and the eggs and yolk separately.
  8. Stir in the soured cream.
  9. Using a basting brush, coat the sides of the cake tin with melted burer and pour in the filling.
  10. Bake for ten minutes and then reduce the oven temperature to 110C.
  11. Bake for 25 more minutes.
  12. After this time, switch the oven off but allow the cheesecake to remain in the oven to cool for 2 hours.
  13. Take the cake out of the oven and run a knife around the sides to loosen it from the tin.
  14. Turn over a serving plate.
  15. Serve and enjoy!
