FRIENDS Joey’s Egg Roll Recipe
Even during the last episode of FRIENDS, Joey was hung up on food and had an egg roll on the floor! This was beyond Monica and beyond us too but all in all we do realise how much we love an egg roll. Well, not stomped on and definitely not kept on the floor.

Ingredients
- 4 tbsp vegetable oil
- 1 inch grated ginger
- 2 cloves chopped garlic
- 2 thinly sliced scallions
- 1 carrots julienned
- 1 red bell pepper julienned
- 1 cup shredded cabbage
- 1/4 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp sugar
- 2 tbsp Sesame oil
- 20 wonton wrappers
- 10 cooked and minced shrimps

Instructions
- Take two spoons of oil in a wok, heat it up and stir fry the ginger and garlic for half a minute.
- Add the scallions, carrots, red pepper and stir fry these as well for two minutes.
- Mix the broth, soy sauce and sugar in a bowl till the sugar dissolves and add it to the wok.
- Add the cabbage and bring the broth to a boil and then reduce the flame and let it simmer for five minutes giving it an occasional stir.
- Once the vegetables become tender add sesame oil and let the broth cool down for about 15 minutes.
- Now add in the shrimp and fold it in.
- Put about one spoonful of the stuffing, make egg rolls using a wonton paper.
- Seal the egg roll by making the end corner damp with water.
- Using the leftover oil, shallow fry the egg rolls till they are golden brown on all sides.
- Drain the excess oil on a kitchen towel and serve hot with a dipping sauce.
