Gilmore Girls Luke’s Special Omelette Recipe
A new special on the board at Luke’s surprises Lorelai and Rory. Being cheeky as usual she rips the omelette apart and has the one with only Jack Cheese. We tried out Luke’s version and simply loved it. So here is Luke’s special omelette recipe!

- 1 tbsp Oil
- 3 eggs
- 2 tbsp cooked bits of bacon
- 1/2 cup Swiss cheese
- 1 dash oregano
- 1/2 cup cubed tomatoes
- salt to taste
- pepper to taste

- Beat the eggs in a bowl and mix in all the other ingredients except the cheese.
- Heat oil in a non-stick frying pan and pour the egg mix and let it cook for about a minute.
- Once the base is cooked flip it over and sprinkle the grated cheese.
- Cook till the cheese melts, fold in half and serve hot.
