Green Beans, Shallots, Anchovies Recipe

Ingredients
- 2 whole bulbs of garlic
- 16 Shallots peeled
- extra virgin olive oil
- Sea Salt
- 12 in fillets of anchoviesoil chopped reasonably fine
- a handful of capers extra-fine if possible
- a handful of chopped parsley
- pinch aof black pepper
- 1 tsp red wine vinegar
- 2 pounds French Beans topped (and if you wish tailed

Instructions
- Roast the garlic bulbs in a hot oven until they are soft when you squeeze them. Allow to cool to a handleable temperature, then squeeze the flesh out of the cloves. Toss the shallots in a little olive oil on the heat, then place in the oven to roast, keeping a close eye on them and tossing regularly until soft and sweet. Keep warm.
- Put a pan of well-salted water on to boil. Mix the anchovies with the garlic flesh, capers, parsley and pepper. Add a splash of extra-virgin olive oil and the vinegar.
- When the water is boiling, put the beans in and boil for 4 minutes. Check they are to your liking, drain, then mix them in a warm bowl with the shallots and anchovy dressing.
- Serve straight away with lamb chops (which hopefully you have not forgotten to cook while doing all the above).
