Indian Chicken Recipe
Because of its versatile nature, there’s a million and one different ways to cook chicken. In India alone, each region has many favourite preparations, including the chicken biryani, the butter chicken (from the North) and the chicken vindaloo (from the South).
One of the ultimate chicken favourites across India and indeed the world is chicken tikka. Especially popular in Punjabi households, chicken tikka is traditionally made by roasting chicken in a tandoor, after marinating it in a mix of yogurt and spices for a long time. Today there are a variety of ways to make chicken tikka, but we’ve shared a traditional recipe that needs an outdoor fire; perfect for a picnic!

Ingredients
- 1 Chicken
- 1 1/2 cups yogurt
- 1 tbsp paprika
- 4 garlic cloves crushed
- 1/8 tsp chili peppers
- 1 tsp Salt
- 1/2 tsp cumin ground
- 1/4 tsp cinnamon
- 1/8 tsp ground cloves
- 1 cup ghee

Instructions
- Cut the chicken into pieces and trim all the fat.
- Wash the chicken and dry completely.
- Mix all the other ingredients together well.
- Put the chicken in this mixture, ensuring that it is completely coated.
- Allow the chicken to marinade in this mixture overnight (place it in a fridge).
- Barbecue the chicken over an outdoor fire for 20 - 30 minutes.
- Brush the pieces occasionally with ghee and turn them over so they roast evenly.
- Once the chicken skin begins to blacken, take it off the barbecue and serve with lemon wedges and chutney!
