Ingredients
- 1 tbsp vegetable oil
- 1 medium onion finely chopped
- 3 cloves garlic finely chopped
- tsp ½dark brown sugar
- 1 tsp chipotle paste
- 400 g tomatoes chopped
- 4 skinless boneless chicken breasts
- 1 small red onion sliced into rings
- a few coriander leaves

Instructions
- Heat the oil in a medium saucepan.
- Add the onion and cook until softened and starts to turn golden. Add the garlic towards the end.
- Stir in the sugar, chipotle paste and tomatoes.
- Put the chicken into the pan, spoon over the sauce, and simmer for 20 minutes until the chicken is cooked.
- Remove the chicken from the pan and shred with 2 forks, and mix again with the sauce.
- Garnish with a little red onion, coriander.
- Serve with remaining red onion along with tortillas or rice.
