Mexican Stir Fry Chicken Recipe

Ingredients
- 500 g skinless chicken breast half
- 2 tbsp chili powder
- 2 tsp cornstarch
- cup ½chicken broth
- 2 tbsp olive oil
- 1 cup frozen whole kernel corn thawed
- 2 medium tomatoes seeded and diced
- 1 cup canned black beans drained
- tsp ¼salt
- 1 clove garlic minced
- cup ¼green onion sliced
- Cilantro to taste

Instructions
- Cut the chicken into thin strips and toss with chili powder, coating well. Leave to marinate for 10 minutes.
- Combine cornstarch and chicken broth. Set aside.
- Heat 1 tablespoon oil in a skillet at medium high heat for about 2 minutes.
- Add chicken and stir-fry for 3 to 4 minutes. Remove from skillet and set aside.
- Pour remaining oil into the skillet.
- Add corn, tomato, garlic, and green onions and stir fry for 2 minutes.
- Return reserved chicken to the skillet.
- Add broth mixture, beans, and salt.
- Cook everything together, stirring constantly, until thickened.
- Serve.
