One-Pot Zucchini Mushroom Pasta

Ingredients
- 4 cups vegetable broth or water
- 1 lb penne pasta
- 2 medium Zucchini chopped
- 8 oz mushrooms
- 1 small onion
- 2 garlic cloves
- 1 tbsp Salt
- 1/2 tbsp black pepper
- 1 tsp dried thyme leaves
- 1/2 tsp dried oregano leaves
- 2 tbsp olive oil
- 1 cup spinach leaves
- 1/3 cup Parmesan chesse grated

Instructions
- In a large pot combine all ingredients EXCEPT olive oil, spinach leaves and parmesan cheese.
- Bring the broth to a boil and once the pasta has softened, mix all ingredients and cook for 10 minutes.
- Add olive oil, spinach leaves and cheese. Mix well.
- Allow the mixture to sit for 10 minutes before serving.
- You can serve up the pasta with some extra cheese drizzled on top!
