Mutton Pasanday Recipe
A traditional recipe, the mutton is cooked in a spicy gravy made with yoghurt, cream, tomatoes and various spices, it is derived from a meal served in the court of the Mughal emperors.

Ingredients
- 1 kg Mutton
- •Salt to taste
- 1 tbsp of Ginger paste
- 1 tbsp of garlic paste
- 2 tbsp of chilli powder
- 2 tbsp of coriander powder
- 2 tbsp of Poppy seeds soaked, roasted and ground
- 1 tbsp of onion seeds
- 2 1/2 cup of yoghurt
- 1/2 cup of Oil
- 6-7 green cardamoms
- 6-7 Cloves
- 2 pieces of cinnamon
- 1 cup of onion chopped finely
- 1 cup of tomato chopped finely
- 1/2 cup of tomato purée
- 10-14 Almonds blanched and slivered
- 1/4 cup of Cream
- 2 tbsp of coriander leaves chopped

Instructions
- In the mixing bowl, mix and marinate the mutton with first 9 ingredients. Keep it aside for 4-5 hours.
- Heat oil in a pan, and add the cardamoms, cloves and cinnamon. Add onions and sauté it well.
- After the onions turn light brown. Add the mutton and cook uncovered , till the water has completely dried off. If the meat has not been cooked yet, add more water, and cook it for some more time.
- Add the tomatoes and puree, and sauté it well.
- Add half of the almonds.
- To make gravy, add a little water and cook for 2 minutes. Garnish it with remaining almonds, cream and coriander leaves.
