Raj Kachori Recipe
As seen before, a kachori is an Indian deep-fried delicacy that is usually filled with roasted pulses, onion, and/or vegetables. On other form of kachori is a thinner, crunchier variant sans the filling. Imagine an enlarged pani puri without the pani and fillings. This is the kachori used to make raj kachori, a popular North Indian street food.
The raj kachori uses the quintessential chat ingredients like tamarind chutney, coriander chutney, whipped yogurt, dahi bhalla, papdi, sprouts, and the likes. So what makes it so different? Probably the way in which all these ingredients come forth to prepare one humongous and delicious snack sets this classic preparation apart from other street snacks. - 1 plain kachori
- 2 tbsp sweetened yogurt
- 1 tbsp tamarind chutney
- 1 tbsp coriander chutney
- 100 gram boiled potatoes
- 100 gram sprouts
- 1 dahi bhalla
- 4 papris
- 50 gram boiled chickpea
- 2 tbsp besan sev

- Fill the raj kachori basket with papri, dahi bhalla, boiled chickpeas, sprouts, pomegranates, bhujia and ginger.
- Sprinkle seasoning; pour tamarind chutney, coriander chutney and yogurt over it.
- Garnish with pomegranates and serve.
