Rice Noodles With Thai Basil

Ingredients
- 2 tbsp jalapeno chilies coarsely chopped
- 1 tbsp garlic coarsely chopped
- 1 tbsp sugar
- 1/4 tsp Salt
- Black pepper to taste
- 3 tbsp fish sauce
- 2 tsp soy sauce
- 4 tbsp vegetable oil
- 1/4 pounds ground pork (or beef turkey or chicken)
- 3 cups rice noodles
- 3/4 cup fresh basil leaf
- 5 cherry tomatoes cut into quarters

Instructions
- Cook the noodles as per instructions on the packet.
- Drain and set aside.
- Mix the sugar, salt and pepper together and set aside.
- Whisk the fish sauce and soy sauce together and set aside.
- Heat the vegetable oil and sauté the garlic for thirty seconds.
- Add the chilies and fry until fragrant.
- Add the protein (pork) and sauté until it begins to brown.
- Add the sugar, salt and pepper mixture and sauté the meat until it is well incorporated.
- Pour in the sauce combination and sauté for a minute.
- Finally, add the rice noodles and toss until they are well combined with the meat.
- Add a three quarters of the basil, sauté for a minute and then add the tomatoes.
- Stir well once and remove the noodles from the heat.
- Garnish the noodles with the remaining basil and serve!
