Samvat Rice Khichdi Recipe

Ingredients
- 1 cup sama chawal barnyard millet
- cup ½potatoes cubed
- 1 tsp Cumin seeds
- tsp ½black pepper
- tsp ½ginger green chili paste
- 3 cups Water
- 2 tbsp ghee
- 2 tbsp coriander leaves chopped
- tsp ½salt

Instructions
- Soak the sama chawal for one hour.
- After an hour drain the chawal and keep aside.
- In a pan heat the ghee, and add the cumin seeds.
- Fry the cumin seeds for half a minute.
- Add the ginger green chili paste and the black pepper.
- Sauté for a minute.
- Add the potato cubes and sauté for two minutes.
- Add the drained chawal and sauté for another minute.
- Pour in the water and stir.
- Add the salt and stir.
- Cover the pan and allow the chawal to cook on a low flame. Stir occasionally.
- Once the chawal softens, remove it from the flame and mix in the coriander leaves.
- Top the chawal with ghee and serve.
Recipe Notes
This recipe yields a slightly mushy rice. If you’d prefer the rice to remain in individual grains, add only 1 ½ cups of water while cooking it.
