Seafood Baked Potato Recipe
Potato can make for a million varieties of snacks and prepartions. From deep-fried French fries, boiled and mashed potatoes, to baked chips and jacket potatoes, the root vegetable knows no boundaries. And each of these recipes can further be spruced up to whip a new preparation. One such dish is the seafood baked potato or shrimp baked potato.
The dish involves baking whole potatoes twice. First with just oil and after that with a blend of buttery mashed potato, shrimps, and cheese topped with some more cheese and paprika. The final result is a platter of delicious whole potatoes with loaded centres. Drooling yet? Follow the steps below to make some at home!

- 6 large Idaho potatoes
- 1/2 cup softened butter
- 1 cup sour cream
- 1 pound sauteed shrimp
- 8 ounces grated cheddar cheese plus more for sprinkling
- Paprika for sprinkling
- Salt and ground black pepper

Instructions
- Preheat the oven to 350 degrees F. Cover a baking sheet or pan with aluminum foil.
- Begin by washing the potatoes, drying them and gently pricking them with a fork on the sides. Coat each potato with vegetable oil, place on the prepared baking sheet and bake for about 1 hour.
- Remove the potatoes from the oven and slice the top third off of each potato.
- Gently scoop out the potato and place in a large bowl. Place the butter in the bowl. Using a mixer on high, mix together, and then add the sour cream and salt and pepper to taste.
- Chop the shrimp into large pieces. Fold in the shrimp and cheese into the mixture.
- Gently stuff the mixture back into the potato shells, making sure not to break them. Pile the mixture as high as you can on top of the potato shells. Sprinkle each potato with more cheese and some paprika.
- Bake in the oven until browned on top, 20 to 25 minutes.
