Seinfeld Chocolate Babka Recipe

- 1 1/2 cups Warm Milk
- 2 packets active dry yeast 1/4 ounce in 1 packet
- 1 3/4 cups sugar
- 3 whole Large Eggs
- 2 large egg yolks
- 6 cups all purpose flour
- 1 tsp Salt
- 1 3/4 cups unsalted butter 1-inch pieces
- 2 1/4 pounds semisweet chocolate finely chopped
- 1 tbsp heavy cream

Instructions
- Take the warm milk in a bowl and add the yeast and a pinch of sugar.
- Let it become foamy which take about 5 minutes.
- Whisk 3/4 cup sugar, 2 eggs and egg yolks in a separate bowl.
- Add the yeast mixture and whisk it in.
- Combine flour and salt in a mixer.
- Add the egg mixture to it and beat it on a low speed.
- Once the flour incorporates, add 1 cup butter and switch to the dough blade.
- Beat the mixture to form a smooth dough.
- Put the dough on the work surface and knead with hands till you get a soft texture.
- Grease a medium-sized bowl with butter and toss the dough in it so that it coated.
- Cover the bowl with a cling film and put it in a warm place for about an hour till the dough doubles in size.
- Stir together the chocolate, remaining sugar and cinnamon in a big bowl.
- Add in the remaining butter and combine it well.
- Grease the loaf pans with butter and line them with parchment paper.
- Make an egg wash by beating the third egg with cream.
- Knead the dough a little and leave it on the surface for 5 minutes and then cut it into 3 equal pieces.
- While working with one piece, keep the remaining two covered in cling film.
- Roll out the dough to about 16 inch square and brush the edges with the egg wash.
- Crumble one-third of the chocolate filling evenly on the dough leaving 1/4 inch of the border empty.
- Roll the dough and pinch the ends to seal.
- Give 5-6 twists to the dough and brush the roll with egg wash.
- Crumble another 2 tbsp of the filling on the left half and fold the right half on top of it.
- Fold the ends and pinch to seal.
- Twist the roll twice and put it in the loaf tin.
- Make the other two loaves in the similar fashion.
- Heat the oven to 350°F and brush the loaf tops with egg wash.
- Crumble 1/3 of streusel on all three loaves and cover them loosely with cling film.
- Leave these in a warm place for half an hour.
- Now bake the loaves and rotate them halfway till they are golden in colour.
- Lower the temperature to 325 and bake till the loaves turn deep golden.
- Remove once done and transfer to wire racks till they cool down.
