Spicy Vanjaram Fish Fry Recipe
Vanjaram, or king mackerel is a popular fish used in South Indian recipes. In this vanjaram fish fry recipe, the mackerel is coated with a spicy marinade and roasted.
Serve this dish as a snack, or with rice and rassam as a main course!

Ingredients
- 2 sprigs curry leaves
- 2 tsp ghee
To marinate
- 200 grams vanjaram fish fillet cleaned and washed
- 1 tsp ginger garlic paste
- 1 pinch turmeric
- 2 tbsp Lemon juice
- 1/2 tsp red chili powder
- 1/2 tsp garam masala

Instructions
- Coat the fish with a mixture of all the other ingredients under the ‘to marinate’ list.
- Allow it to marinate for half an hour.
- Heat the ghee and sauté the curry leaves until crisp.
- Lower the flame on the stove and add the fish to the pan.
- Cover the pan and cook for six minutes, flipping once in between.
- Take the lid off and continue drying until the fish becomes completely dry.
- Serve and enjoy!
