Vanjaram, or king mackerel is a popular fish used in South Indian recipes. In this vanjaram fish fry recipe, the mackerel is coated with a spicy marinade and roasted. 

Serve this dish as a snack, or with rice and rassam as a main course!

Instructions
  1. Coat the fish with a mixture of all the other ingredients under the ‘to marinate’ list.
  2. Allow it to marinate for half an hour.
  3. Heat the ghee and sauté the curry leaves until crisp.
  4. Lower the flame on the stove and add the fish to the pan.
  5. Cover the pan and cook for six minutes, flipping once in between.
  6. Take the lid off and continue drying until the fish becomes completely dry.
  7. Serve and enjoy!
