Suji Halwa Recipe
Halwa, a.k.a., sheera is a popular Indian dessert that is made by roasting the ingredients in pure desi ghee along with dry fruits, water, sugar, and dollops of flavor. The dish sees a number of variations in terms of the ingredients used. For example, vegetable lovers can whip up a gorgeous gajar ka halwa; fans of dry fruits and nuts will definitely love themselves some badam ka halwa; and classic halwa fanatics can never have enough of besan ka halwa, moong dal ka halwa, or suji halwa.
Suji (semolina or rava) makes for an excellent choice when making halwa. The granular ingredient mixes deliciously well with the rest of the ingredients to turn out into a rich halwa. - 1 cup Semolina (rawa/suji)
- 1 cup sugar
- 4 cups Water
- 1/2 cup ghee
- 1/4 tsp powdered green cardamom
- 1 tbsp blanches almonds shredded for garnish

- In a heavy bottomed pan or wok, melt the ghee and stir fry the suji over medium/low heat.
- At the same time in another pan dissolve the sugar in water over low heat and keep on simmer, till required.
- When the suji is a lightly browned, add the sugar solution and cardamom and bring to a boil. Simmer till the liquid is absorbed and you reach the desired halwa consistency.
- Serve hot, garnished with blanched almonds.
