Suji Halwa Recipe

Halwa, a.k.a., sheera is a popular Indian dessert that is made by roasting the ingredients in pure desi ghee along with dry fruits, water, sugar, and dollops of flavor. The dish sees a number of variations in terms of the ingredients used. For example, vegetable lovers can whip up a gorgeous gajar ka halwa; fans of dry fruits and nuts will definitely love themselves some badam ka halwa; and classic halwa fanatics can never have enough of besan ka halwa, moong dal ka halwa, or suji halwa.

Instructions
  1. In a heavy bottomed pan or wok, melt the ghee and stir fry the suji over medium/low heat.
  2. At the same time in another pan dissolve the sugar in water over low heat and keep on simmer, till required.
  3. When the suji is a lightly browned, add the sugar solution and cardamom and bring to a boil. Simmer till the liquid is absorbed and you reach the desired halwa consistency.
  4. Serve hot, garnished with blanched almonds.
