Thai Chicken Breasts

Ingredients
- 2 1/2 tbsp gingerroot grated
- 2 tbsp garlic chopped
- 1/8 tsp crushed red pepper flakes
- 4 boneless skinless chicken breasts
- 1/2 cup flour
- Salt pepper to taste
- 2 tbsp olive oil
- 4 tbsp soy sauce
- 1/2 cup brown sugar
- 1/2 cup white wine vinegar
- 1 tsp fish sauce

Instructions
- Mix the gingerroot, garlic and red pepper flakes together.
- Sieve salt and pepper as per taste into the flour and coat the chicken in the flour.
- Sauté the chicken in the olive oil until browned and cooked through.
- Remove the chicken from the pan and then sauté the ginger garlic mixture in the same pan.
- Add the soy sauce, sugar, vinegar and fish sauce.
- Allow the mixture to boil and then reduce it to simmer.
- Stirring constantly, allow the sauce to thicken.
- Once it thickens, remove it from the stove and pour it over the chicken.
- Serve!
