Thai Chicken with Ginger and Mushrooms

Ingredients
- 3 tbsp peanut oil
- 1 onion cut into slivers
- 6 cloves garlic minced
- 1 1/2 pounds boneless skinless chicken breasts, cubed
- 2 tbsp soy sauce
- 2 tbsp gingerroot finely chopped
- 2 tbsp Mint leaves chopped
- 8 Shiitake mushrooms sliced
- 5 inch green onions chopped into 1pieces
- 2 tbsp rice vinegar
- 1 tsp brown sugar
- 2 tbsp fish sauce

Instructions
- Whisk together the vinegar, fish sauce and brown sugar.
- Sauté the onions, garlic and chicken in hot oil for three minutes.
- Mix in the soy sauce, ginger, mint leaves, mushrooms, green onions and chilies and sauté for another five minutes.
- Whisk the vinegar, brown sauce and sugar mixture into the stir fry and take it off the heat.
- Serve hot!
