Thai-Style Skewered Chicken

Ingredients
- 3 pounds skinless boneless chicken breasts cut into cubes
- wooden skewers

- 1/4 cup soy sauce
- 3 tbsp sugar
- 2 tbsp lime juice
- 2 tbsp Oil
- 1 tbsp curry powder
- 2 garlic cloves
- 1 tsp Ginger minced
- 1/2 tsp Cardamom
For the peanut coconut sauce
- 13.5 ounces coconut milk
- 1/4 cup peanut butter
- 1/4 cup dark brown sugar
- 1 tbsp soy sauce
- 1 1/2 tsp red curry paste

Instructions
- Soak the skewers in ice cold water.
- Whisk the ingredients for the marinade together and pour it over the chicken.
- Knead the marinade into the chicken.
- Cover the chicken and marinade overnight.
- Coat a grill rack with non-stick cooking spray.
- Skewer the cubes onto the skewers (6-8 on each one) and grill for eight to ten minutes.
- Meanwhile, combine the ingredients for the sauce and cook it over medium heat for three minutes.
- Remove the skewers from the grill and allow them to cool.
- Serve the skewers with the sauce as a dip.
