Thai Zucchini

Ingredients
- 1 Garlic Clove minced
- 1 tsp Ginger minced
- 1 pinch red pepper flakes crushed
- 2 tsp olive oil
- 1/3 cup dry roasted peanuts finely chopped
- 3 tsp chicken broth
- 3 tsp rice vinegar
- 2 tsp soy sauce
- 1 pinch sugar
- 3 medium zucchini thinly sliced

Instructions
- Sauté the garlic, ginger and red pepper flakes in the olive oil over medium heat for a minute.
- Add the peanuts and sauté for half a minute.
- Add the chicken broth, rice vinegar and soy sauce and stir well.
- Add the zucchini and sauté for five minutes.
- Serve and enjoy!
