- 2 cups all purpose flour
- 2 tsp baking powder
- 1/2 tsp Salt
- 1 3/4 cup sugar
- 5 eggs
- 2 lemon juice
- 1 tsp lemon zest
- 1 cup Oil
- 8 ounces cream cheese
- 1/2 cup butter
- 2 1/2 cups powdered sugar
- 1/2 lemon juice
- 1/2 tsp lemon zest
- 3 drops yellow food colouring

Instructions
- Keep the oven for preheating at 350°F.
- Add flour, baking powder and salt to a bowl and sift it thrice.
- Now in another bowl put eggs and sugar together and whip using a hand blender till you get a fluffy texture.
- Add the oil, lemon juice and zest then whisk some more.
- Fold in the flour mixture and mix it well.
- Pour the batter in lined cupcake moulds and bake for about 20 minutes.
- Meanwhile get the frosting ready beginning whipping the cream cheese till it is smooth.
- Add the butter and whip once again.
- Incorporate powdered sugar and whip till you see soft peaks.
- To this, add lemon juice, lemon zest and yellow food color, then whip for half a minute.
- Cover the bowl using a cling film and refrigerate for half an hour.
- Once the cupcakes are baked and cooled plus the frosting has refrigerated for a while, pipe it on to the cupcakes and enjoy!
