Instructions
- Soak the urad dal and green chillies for an hour.
- Drain the water and grind along with asafoetida, curry leaves, coriander leaves, and ginger.
- Peel the shallots and pulse them in a mixer and add to the ground mix.
- Add salt to the batter before making the vadas.
- Take a ball of batter (that should fit in your palm) and flatten it over a plastic sheet. Poke a hole through the centre.
- Heat oil in a pan till oil splutters and add the vadais, flipping after 2 minutes, and frying until golden brown.
- Drain using paper towels and repeat the same process until batter is done.
