Vettu Cake Recipe
Vettu cakes are tea time snacks usually found at roadside tea stalls in southern India. A popular snack in Kerala, it is very similar to the ooty varki, which is also somewhat a deep fried sweetened dough served alongside tea. The vettu cake is slightly puffier (almost cake-like), owing to the presence of baking soda in the dough.

Ingredients
- 2 cups all purpose flour maida
- ¼ cup semolina/rava
- 2 eggs
- ¼ tsp cardamom powder
- ¼ cup sugar
- ½ cup Milk
- ¼ tsp baking soda
- 3 cups Oil for frying
- Water as required
- Salt as required

Instructions
- In a bowl beat the eggs along with sugar until it dissolves. Keep it aside.
- Sieve the flour, semolina and baking soda into a pan, add the egg-sugar mix, milk and heat over a very low flame.
- Mix well using a spoon and turn off the flame. Allow the mix to cool.
- Add salt, cardamom powder to the pan and turn the mixture into a smooth dough. Keep it covered for around 45 minutes.
- Shape the dough into a log shape and then cut into thick (about 1”) 2in*2.5in square pieces.
- Make a cross mark in the center using a sharp knife.
- Boil oil in a pan and turn the flame to minimum.
- Fry each piece in minimum heat for about 4-5 minutes flipping occasionally for uniform cooking.
- Once cooked transfer the vettu cakes onto a paper towel to drain off remove excess oil.
- Serve with tea.
