Ingredients
- Portion sized whole grain spaghetti
- 1 medium red onion sliced
- 2 cloves chopped garlic
- 2 tablespoons olive oil
- 1 bunch kale stemmed and roughly chopped or torn
- 8-10 cherry tomatoes halved
- Handful of roasted almonds or pine nuts
- 2 tablespoons olive oil
- cup ¼grated pecorino
- Salt & Pepper to Taste

Instructions
- Cook pasta according to the directions on the packet and keep aside.
- Heat oil in a skillet and add the sliced onions, chopped garlic, salt and pepper. Cook until he onions are slightly browned.
- Add the chopped kale and cook until tender. Add the halved tomatoes to the skillet and cook until soft.
- Add the roasted nuts and pecorino to the mixture adding the spaghetti to the skillet. Mix well combining everything together.
- Plate the spaghetti adding extra pecorino on top. Serve hot.
