- cup ¼softened butter
- cup ¼sugar
- 1 egg white
- ¾ spoon baking soda
- 1 cup Water
- cup ½molasses
- 1 teaspoon vanilla extract
- 1-1/4 cup all purpose flour
- 2/3 cup melted butter
- cup ¾hot water
- teaspoon ¼salt
- cup ½chopped pecans
- teaspoon ½ground ginger
- teaspoon ¼ground allspice
- 1/8 teaspoon ground nutmeg
- teaspoon ½ground cinnamon
- 6 tablespoons brown sugar
- Sweetened whipped cream

Directions to cook
- Mix together one cup molasses and water and keep aside.
- In a large bowl, whip softened butter and sugar until light and fluffy. Beat in the egg white and vanilla extract.
- In a separate bowl, mix together all purpose flour, all the spices and salt. Add the gry ingredients to the wet ingredients and add in the molasses and mix througly.
- Fold in the pecans into the mixture.
- Pour in the mixture into a greased slow cooker and sprinkle brown sugar on top. Mix melted butter and hot water and pour over the batter in the cooker.
- Cover and cook on high. Test with a toothpick and if it comes out clean, your cake is done!
- Let it stand for a good 15-20 minutes in the cooker before serving. Serve with a side of whipped cream and a sprig of mint for that authentic touch!
