The Great Gatsby Spiced Baked Ham Recipe
The Great Gatsby remains a classic favorite among many. Through the novel, Fitzgerald proved his power over words by getting his readers extremely emotionally invested in Jay Gatsby, Daisy and their tragic love story.
Perhaps another reason that The Great Gatsby is popular today is because of the way it depicts the so-called ‘Roaring Twenties’, which marked the beginning of modern America. The Roaring Twenties involved luxury and revelry as described in an excerpt from the book –
“On buffet tables, garnished with glistening hors d’oeuvre, spiced baked hams crowded against salads of harlequin designs and pastry pigs and turkeys bewitched to a dark gold.”
This was a scene from one of Gatbsy’s parties; doesn’t it sound extravagate and oh so delicious? Today, we’re sharing a recipe for that spiced baked ham. With the Christmas season just around the corner there’s no better time to start experimenting with ham recipes; serve this with a side of potatoes for lunch or dinner.

- 1 boneless mild gammon ham 4 pound
- 250 ml red wine
- 3 liters Water
- 1 large onion halved
- 2 garlic cloves unpeeled
- 1 head fennel halved
- 2 Star Anise
- 1 tbsp coriander seed
- 1 tbsp Fennel Seed
- 1 tbsp mixed peppercorns
- 16 whole cloves
- 4 tbsp red currant jelly
- tsp ½ground cinnamon
- 1 tsp smoked paprika
- tsp ½red wine vinegar

- Immerse the ham in the water in a pan.
- Add all the other ingredients for the ham and then bring the mixture to a boil.
- Reduce the heat and partially cover the pan.
- Allow the ham to cook for 3 hours.
- Preheat an oven to 440 degrees F.
- Remove the ham from the water.
- Strip off the rind and cut out a diamond pattern into its fat covering.
- Stud each diamond with a clove.
- Heat the jelly, cinnamon, paprika and red wine vinegar and allow the mixture to reduce to a syrup.
- Place the ham in a roasting tray and pour the glaze over the ham.
- Bake the ham for 12 minutes.
- Take out off the oven and allow to rest.
- Carve and serve.
