Aamras Recipe
The North Western and Western chunk of India has a special corner for sweet foods in their heart. And although, the entire country loves their mithai and various other desserts, Gujarat, Maharashtra, and Rajasthan have a special place for saccharine in their main course as well. The three states commonly consume a mix of sweet dishes and salted dishes like puran poli, shrikhan, meethi kadhi, and so on. One such popular sweet main dish is aamras.
As the name suggests, aamras is made using aam (which means mangoes), and mostly just aam. The dish is essentially just pureed mango pulp occasionally mixed with milk or water and flavouring agents like cardamom, saffron, or dry ginger powder. - Peel the mangoes, remove the core and chop the fruit.
- In a blender, puree the mango and sugar (optional).
- Add the dry ginger powder, saffron, or cardamom powder if you want your aamras to be slightly flavoured.
- Give a final stir and serve.
